Description
This beautiful layered dessert is an ode to Yggdrasil, the great World Tree, a centerpiece of the Norse cosmos. Each layer represents one of the tree's realms: the honey-soaked sponge cake is the golden realm of Midgard, the elderflower custard is the ethereal glow of Asgard, and the three distinct fruits—apple, berries, and plums—represent the three great roots that connect the worlds. A serene and flavorful experience, this dessert is as much a feast for the eyes as it is for the palate.

Ingredients
For the Sponge Cake:
- 1 box of plain sponge cake mix (or a simple homemade recipe)
- 1/2 cup hot water
- 1/4 cup honey
For the Elderflower Custard:
- 1 large box vanilla pudding mix (or a simple homemade custard)
- 2 cups milk
- 2 tbsp elderflower syrup
For the Fruit Layers:
- 1 large apple, thinly sliced
- 1 cup mixed berries (like raspberries, blueberries, or cranberries)
- 1 cup dark plums, sliced
-
Steps:
- Prepare the Cake: Bake the sponge cake according to the package directions. While it is still warm, mix the hot water and honey, and gently pour the mixture over the cake to soak it. Let it cool completely.
- Prepare the Custard: In a bowl, whisk together the vanilla pudding mix and milk until smooth. Stir in the elderflower syrup. Let the custard set according to package directions, then refrigerate until chilled.
- Assemble the Ambrosia: In a large, clear glass trifle bowl or a similar dish, tear the soaked sponge cake into chunks and place it as the first layer at the bottom.
- Create the Layers: Layer a base of thinly sliced apples, representing Midgard, followed by a generous spoonful of elderflower custard, which symbolizes Asgard. Next, add a layer of mixed berries, then another layer of the remaining elderflower custard. Finish by topping the dessert with a final layer of dark plums.
- Chill and Serve: Refrigerate the ambrosia for at least 2 hours to allow the flavors to meld and the layers to set. Serve chilled, offering a taste of the cosmos with every bite.
